Summer Offerings

Some of the fresh new offerings for the Summer season, straight from the mind of the Madison Beach Hotel Chef de Cuisine.

Summer is upon us and I’m particularly excited for the season. I’m proud to announce we have launched our new summer menus, offering many new additions along with our signature dishes.

Our fresh tuna tartar with avocado, English cucumber, spicy aioli and our house made kettle chips are always a big hit. Our Raw Bar selection of local oysters, Little neck clams from the Thimble Islands in Branford, and our wild caught shrimp cocktail can’t be beat.

One of the new dishes guests are already raving about is our line-caught swordfish with smoked paprika aioli, organic wild red rice and roasted corn and asparagus. One of my personal favorite new additions is our oven roasted fluke with herb roasted fingerlings, sautéed French beans and little-neck clam, tomato and scallion salsa. A couple other great additions to the menus this summer include organic salmon and chicken breast. If you are looking for a great spot to sit in the sun by the water, our patio in the afternoon is the perfect spot! There you’ll find our fantastic bar menu featuring certified angus beef burgers, fish and chips, chicken salad croissant, amazing clam chowder and our ever popular New England lobster roll.
