Peppermint Bark by Chef Erin

One of my favorite things to make for the holiday season is peppermint bark. This is something that anyone can do! It’s one of the most simple, but delicious recipes out there.

To make the bark you will need one bag of dark chocolate chips (I like to use Ghirardelli 60% Cacao), one bag of white chocolate chips (I find that Hershey’s premier white chocolate works best), peppermint extract, and crumbled peppermint candy. You can either buy a container of peppermint crumbles or buy whole peppermint candies and crush them yourself.

First, prepare a baking sheet by covering it with a silpat or a smooth layer of aluminum foil. To make the bark, Melt down the dark chocolate over a double boiler and pour onto the baking sheet. Using a spatula, spread the chocolate to form a thin, even layer.

Next, melt down the white chocolate over a double boiler. Once the chocolate is completely melted, add peppermint extract to taste and mix well. I like to use about 1 teaspoon. Pour the white chocolate sporadically over the dark chocolate, and swirl together using your spatula. Sprinkle with crushed peppermint candy.

Put the chocolate into the refrigerator until the chocolate is set. The time will vary depending on how thick the bark is, but will take roughly a half hour. Once set, break the bark into rustic pieces and enjoy!
