The Taco Truck's Coming Back!

Encouraged by poll results on Patch and Facebook, Taco Pacifico owner Greg Sharon plans to open in Madison at least once a week at the beginning of December, just in time to provide us sustenance during holiday shopping.

 

So where has that Taco truck been?

Everywhere, it seems, except Madison. It's been spotted in Hartford, Wateford, Litchfield, and all over the state, mostly at private parties over the weekends.

Taco Pacifico Owner Greg Sharon, who runs the truck, admits it.

"I feel like I've been cheating on Madison and have been having affairs all over the state, Hartford, Litchfield, Waterford, you name it, our truck has been there," Sharon said. He says the private parties have been lucrative and have provided him with the opportunity to use the week to focus on his family and a new enterprise.

As for his family, Sharon decided to make that a top priority after his mother fell ill and passed away in May.

"That was really, really tough on us," he said of his family. So he took time to focus on his father and other family members. That meant gradually cutting back on his weekday business and focusing on weekend events.

He's also been developing a line of tortilla chips that he plans to sell commercially. He is in the process of getting his FDA certifcation and making sure that the chips can be produced on a large scale commercially without sacrificing quality.

In the meantime, he plans to sell them in smaller batches when he re-opens his truck for business in Madison, hopefully at the beginning of December. He started thinking about bringing the truck back to Madison when his friends asked him.

"People were cornering me at my kid's birthday party and saying, 'this isn't fair to Madison, you have to come back at least one day a a week'" he said.

So, Sharon put up a query on his Facebook page, asking if people were interested, and that got . The response convinced him he should give it a try. "The response has been terrific," he said. He said he figured that the holiday shopping season was a good time to re-start in Madison.

The truck is in the process of undergoing maintenance and repairs right now, he said, and should be ready for the beginning of Dember. He is contemplating a return to the Academy School lot, near the center of town, or to Dino's, which is off of Boston Post Road, near Neck Road, and close to the Guilford line.

He said he'll know more the last week of November and will keep us posted.

"I want to be open to Madison and get back to Madison," he said. "It's where I live and where I started my business. The town has supported the business as it began to grow. It's the least I could do."
