Blueberry Bliss!

Another in our summer series of fun things to do with the kids

Did you know that July is blueberry month? Why not go picking when it cools off this afternoon or later this week, and make this delicious desert that only uses a pan and a measuring cup. No other dishes to dirty.

To find out more about blueberry picking at nearby Bishop’s Orchards in Guilford, call (203) 458-PICK for daily hours and crop availability. The cost is $2.75 per pound if you pick more than 5 pounds; $2.99 per pound if you pick less than 5 pounds. Credit cards are not accepted for pick-your-own.

Blueberry Bliss

20 ounce can crushed pineapple, undrained

1 yellow cake mix

3 cups fresh blueberries

½ cup sugar

½ cup melted butter

1 cup chopped pecans

Picture 1 - ingredients

Butter a 9x13 pan spread the pineapple on the bottom

Next, sprinkle the cake over the pineapple

Now sprinkle blueberries over the cake mix

Sprinkle the sugar over the top of the blueberries.

Drizzle the melted butter over the top of the sugar

Picture 6 - butter

Top with nuts, and bake at 350 degrees for 45 minutes until hot and bubbly.

Picture 7 - fresh baked

Serve with ice cream or whipped topping or just plain. It is so good.
