"All You Knead" Coming To Madison!

New bakery, run by Guilford native Gail Boucher and her partner, Chef Carl, will feature scones, croissants, muffins, wraps, salads, smoothies, sandwiches, and French Press coffee.

Behind the brown butcher paper that shields the inside of 712 Boston Post Road from view, Guilford native Gail Boucher and her partner, Chef Carl, are working hard to finish off a new bakery and cafe due to open sometime after Labor Day in Madison, CT. 

A call to Gail was not immediately returned, but Carlene Weis, who is on the Madison Chamber of Commerce's Ambassador Committee, said Gail and Carl are probably just working hard to get everything done. The owners of the new bakery/cafe planned for Madison recently attended a Chamber meeting, with trays of their baked goods. Everyone loved them, Weis said. 

The exact timing of the opening will depend on how quickly the contractors are able to install needed equipment, Weis said. A walk-in freezer, bread ovens, stoves and a large, custom-made vent system are all on order and have to be installed, she said. 

Weis said Gail has had about 14 years of corporate restaurant management experience and Carl has been baking for about 20 years. He is particularly well known for his stuffed croissants, she said, including one that includes coconut and chocolate. "Dessert heaven, that's what we're talking about here," she said. 

She said some of the treats may have local names, such as Surf Club Strawberry. Weis said as much as possible will be sourced locally in the state, including fruit, eggs, milk, and butter. 

Offerings will include scones, croissants, muffins, wraps, salads, smoothies, sandwiches, and French press coffee. A retail section also is in the works, one that might include sauces, homemade pastas, homemade jams and jellies and freshly made bread. A whole wall of artisan breads is planned.
