Make Ice Box Cake!

This is a delicious and really easy cake to make, and fun for the kids, too.

What you need is a box of chocolate wafers - my mom always used Nabisco, but if other companies make them, that's fine, too. These are plain chocolate cookies, about 3 inches across.

Whipped cream (store bought is fine, but home-made is better)

Then settle the kids down, give them each a spatula or a rounded knife, and have them start to make stacks of chocolate cookies and whipped cream. Four or five cookies in a stack is fine. Get them as neat as you can - neatness counts here!

Then, lay the stacks down on a platter, so they form a log. Make sure you have whipped cream between every chocolate wafer. Then cover the entire log with whipped cream, and dot with maraschino cherries.

Refrigerate for at least four hours. Overnight is better. Cut on the diagonal. This is an amazingly delicious cake, and I promise the kids will remember it forever.
